3 sweet breakfast recipes to try at home

Compote and fruit yogurt

A perfect choice for one of your sweet breakfast recipes.

Ingredients:

  • Frozen fruit puree (use any combination of berries, currants or stone fruit).
  • Sugar (the amount of sugar you use depends on the type of fruit you use and personal preference).

Place the frozen fruit puree in a large saucepan, add the sugar and cook over medium heat for 8 minutes. Stir often. The fruit will release lots of juice. Bring to the boil and cook for a couple of minutes. Let it cool.

Spoon the compote into the jars and top with fruit yogurt – 1-part puree to 2-parts yogurt. Sprinkle with granola.

Fruity honey pancake

Add this to your sweet breakfast recipes and breakfast will never be the same!

Ingredients:

  • 1 egg whiste and 1 large egg
  • ¼ cup of milk
  • ¼ cup flour
  • 2 tsp honey
  • 1 dash vanilla extract
  • 1 tbsp oil
  • A pinch of salt
  • Berries (you can experiment with other toppings)

Preheat the oven to 392 °F. Heat a small 6” ovenproof frying pan. Beat the egg white until it makes peaks. In another bowl, mix the egg with flour, salt, honey and vanilla. Then whisk in the warm milk. Gently fold the egg white into the batter with a metal spoon. Melt one tbsp of oil in the hot pan. Pour batter in and cook on the stovetop until the edges begin to set. Place pan in the oven and bake until puffed up and golden (around 7 mins). In a saucepan warm up the berries or whichever fruit you prefer. Sweeten with honey. Double the quantity for 2 portions.

Carrot cake oatmeal

Imagine a cake for breakfast! There is no guilt in using this delectable oatmeal as one of your sweet breakfast recipes (See also: Recipes with fruit.)

Ingredients:

  • ¼ cup carrot peeled and shredded
  • 1 cup hot water
  • ⅓ cup quick-cooking oats
  • 1 tbsp raisins
  • 2 tbsp chopped walnuts
  • ½ tsp ground cinnamon
  • Pinch of ground nutmeg
  • Pinch of ground cloves
  • 1 tbsp honey or maple syrup
  • Pinch of ground ginger
  • ½ tsp pure vanilla extract
  • 1-2 tbsp heavy coconut cream or milk
  • Pinch of sea salt

Bring the carrot and the water to a boil over medium heat. Boil for 3 minutes, uncovered, stirring occasionally. Stir in the oats, raisins, coconut, 1 tbsp walnuts, spices, and salt. Cook until the oats absorb the liquid, stirring constantly. Take off the heat and stir in the honey and vanilla. Serve up and top with heavy cream (or coconut cream) and the remaining walnuts.

Sweet breakfast recipes do not have to place you on a sugar high and then drop you. As you can see with these recipes, there are plenty of ways to make your breakfast exciting and healthy.
