Tropical ice cream recipes
Tropical fruit sorbet
Ingredients
- 2 pounds of tropical fruit
- 1 cup of granulated sugar
- A cup of water
- 1 large egg in its shell
- 1-4 tablespoons of lemon juice
Step by step
- Syrup: bring the sugar and water to a simmer over a medium-high heat. The sugar must dissolve completely. Stir one or twice. Remove from the heat and allow to cool.
- Blend the fruit with half a cup of cooled syrup until the fruit is completely liquified.
- Strain the mixture through a fine-mesh strainer.
- Gently lower a washed and dried egg, in its shell, into the sorbet base. The sugar levels of your sorbet are perfect if you see a roughly 1-inch round of shell above the liquid. Add more cooled sugar syrup if you see less, and more fruit juice if you see more.
- Stir in 1 tablespoon of lemon juice. Add more if you need to.
- Chill in the refrigerator for at least one hour.
- Churn the chilled base in an ice cream maker until it reaches a thick smoothie consistency.
- Freeze the sorbet in a freezable container for at least 4 hours or until hard.
If you don’t have an ice cream maker, pour the base into a wide dish, and stir it up every half hour or so as it freezes, to break up the ice crystals. It will be less smooth but still delicious!
Tip: Freeze the ice cream making bowl before.
